Fixed costs and expenses

Settings → Fees & overheads → Fixed costs per month is the simple version. Expenses (Finance → Expenses) holds individual costs with categories. Both are counted against the month, never divided across orders: splitting a rent bill across four hundred baskets gives a number that looks precise and answers nothing.
