Cost of goods as a percentage
The fallback for every product you have not costed.
Settings → Product costs → Cost of goods. A share of revenue excluding VAT. It applies to every line whose variant has no cost entered, and to nothing else. Most stores land between 25% and 45%.
It is a reasonable start and a poor finish: every basket gets the same cost, so orders are ranked by size rather than by what they left. Cost your best sellers and the percentage matters less each week.
